Goose Roasting Time Calculator

How long it takes to roast goose to a safe temperature depends on the weight of the bird. A safe internal temperature is 180°F (82°C) for the meat and 165°F (74°C) for the stuffing. The heavier the goose, the longer it takes to cook it to a safe temperature.

By estimating how long you need to roast goose in the oven, you can better plan the preparation of your holiday dinner. The calculator below is calibrated to a conventional oven set to 350°F (177°C).

To Stuff or Not to Stuff?

Stuffed whole poultry takes longer to cook to a safe internal temperature than unstuffed birds. And the longer the goose is in the oven, the drier the meat becomes. By cooking the stuffing separately from the goose, you will improve the flavor and texture of the meat.

If you want to save time and space by cooking the stuffing inside the goose cavity, use no more than 10% of the bird's weight. For instance, if roasting a 14-pound goose, use no more than 1.4 pounds of stuffing (equivalent to 0.64 kg, or 1 pound and 6 ounces).
